Instantly recognisable as a local French cheese as sold in markets across the country the Crottin de Pays is a goat cheese made from thermised (Unpasteurised) milk. Whilst hard to the touch, once cut and eaten the texture is immediately crumbly before melting in the mouth. Not overpowering, the cheese has a fresh and delicate "goaty" taste. Enjoy on it's own with a baguette and glass of wine or grilled to top a salad or baked in a pastry.
