A striking cheese to look at with pits of blue standing out in stark contrast to the white paste you get with a goat-milk cheese underneath a burnt-cream coloured rind dusted with mould.
After a period of ageing this remarkable cheese strikes a perfect balance of saltyness from the blue and tang from the goat with a background of cream and nuts. It cuts cleanly then melts in the mouth.
A beautiful cheese that makes you wonder why there are not more blue goat-milk cheeses out there!
