Gorwydd Caerphilly
£4.15
Trethowan Dairy, Somerset
A complex multi award winning cheese from the Trethowan brothers, who also make Pitchfork Cheddar. Now based in Somerset they brought the Gorwydd recipe with them when they moved from near Llanddewi Brefi in the Teifi Valley. It is matured for longer than most farmhouse Caerphillys to give it a wonderful unique depth of flavour; a lemony and lactic core surrounded by a creamy, savoury layer beneath the thick rind, which in itself is dry and soft to the touch and crumbly in the bite. It really is, as they tell us, three cheeses in one.
