Harbourne Blue

Harbourne Blue is a goat's cheese from free-ranging goats farmed at Buckfast on the edge of Dartmoor and produced by Ben Harris at Ticklemore Cheese Company in Devon, near Totnes, England. The Dairy was set up over thirty years ago to make blue cheeses using techniques similar to Roquefort, but Harbourne Blue uses goat’s milk, giving it a unique style.
The goats graze on permanent pastures from April to November, with half the herd kidding every spring, ensuring year-round milk production. Made by hand, the cheese matures for around 10 weeks, forming a crumbly, dense texture.
Harbourne Blue's flavours vary seasonally; sometimes spicy and assertive, when it can easily overwhelm milder cheeses, but often also having a sweet, clean, fresh and slightly floral taste.
