Jam Packed Scotch Bonnet Chilli Jam

This is a punchy and versatile chilli jam made using fresh Scotch Bonnet Chillies. It is tempered slightly with some sweetness to provide a balance between both heat and flavour. The heat builds slowly rather than like eating an angry wasp. This is a wonderfully versatile preserve that can accompany cheese, cold meats, fish or burgers equally well. On the other hand you can add a spoonful to a stew or stir-fry to spice things up a bit.
